Sesame Pea Shoots with White Mushrooms 芝麻豌豆苗拌白玉菇

Ingredients:

  • Pea shoots 150g
  • White mushrooms (enoki) 80g

Sauce:

  • Black vinegar 2 tbsp
  • Light soy sauce 2 tbsp
  • Toasted white sesame seeds 1 tbsp
  • Sesame oil 1 tbsp
  • Cooking oil 1 tbsp (for blanching)
  • Salt 1/3 tsp (for blanching)

Steps:

  1. Bring water to a boil, add 1 tbsp oil and 1/3 tsp salt. Blanch mushrooms for 30 sec over medium heat.

  2. Add pea shoots, blanch for another 30 sec, then drain well.

  3. Toss with vinegar, soy sauce, sesame seeds, and sesame oil. Mix well and serve.
